Candice's Turkey Vegetable Lasagna

1 lb ground turkey
2 jars pasta sauce
1 pkg frozen chopped spinach
1 egg
1 tub low fat ricotta cheese
2 medium green zucchini
~add mushrooms/onions as desired
1 cup grated parmesan cheese
1-2 cups of mozerella
1 pkg lasagna noodles 
salt
pepper
1/2 tsp nutmeg

1. Brown meat with onion/ mushrooms if desired.  Add sauce into meat mixture.

2. Defrost and drain spinach.  Mix spinach with egg, ricotta cheese, parmesan cheese, salt & pepper, nutmeg.

3. Cook Lasagna noodles al dente.

4. Slice zuchinni in either small thin medalions or lengthwise in thin strips.

5. Layer lasagna: sauce, noodle, cheese/spinach mixture, zuchini layer, sauce, noodle, cheese/spinach, zuchini, sauce, mozerella cheese.

6. Bake at 350 for ~45 min
