Pizza Roll-Ups



1 recipe bread dough (rapid rise)
1 pound lean pepperoni
1 teaspoon salt
1 teaspoon pepper
2 cups grated mozzarella cheese
1 teaspoon Italian seasonings
1 Tablespoon chopped fresh parsley
1 Jar Italian tomato Sauce/ Spaghetti sauce

1 can sliced olives (optional)


Cooking Day: Prepare dough. Roll it into a 14 x 24 inch rectangle. Sprinkle dough with salt, pepper, Italian seasoning and parsley. Sprinkle with mozzarella cheese and olives. Cover with pepperoni. Press filling into dough. Roll dough lengthwise like a jellyroll and bake for approx 10 minutes. Cut roll into 24 1 inch slices. Freeze.

Serving Day: Preheat oven to 400°. Lay rolls on baking sheet. Bake for 20-25 minutes or until golden brown. Serve with warmed Italian tomato sauce.

Makes 24 roll-ups, about 12 servings.
