3-4 chicken breasts- cooked and cut up
1 small can diced green chilis
½ diced onion
1 pkg flour tortillas (burrito size)
1 large can enchilada sauce
Shredded cheese
1 small can sliced olives (optional)
Cooking Day: Mix chicken, some cheese, chilis, and onions in a large bowl. Pour enchilada sauce into a large skillet and warm. Dip tortillas into sauce until coated. Spoon chicken mixture into tortilla and wrap burrito style. Place in baking dish. Repeat. When finished pour remaining sauce over top of enchiladas. Sprinkle cheese over top and top with olives if you want.
Serving Day: Bake for 30 min. at 350
