Lemon Thyme Roasted Chicken
Ingredients:
Whole Chicken- rinsed and patted dry
1 lemon- cut into chunks
salt, pepper, thyme (fresh or dried) to taste
Olive Oil
Steps:
1. Place 2/3 of lemon chunks inside chicken cavity
2. Coat outside of chicken generously with olive oil
3. Sprinkle salt, pepper, and thyme over outside of chicken
4. Add rest of lemon and 1/4-1/2 inch water to roasting pan
5. Roast in oven at 275 degrees for 3 hours uncovered
