Shawna's Green Chili Enchilada Casserole

Ingredients:
  • 4 cooked chicken breasts, shredded (or one pulled rotisserie chicken)
  • One large can of Green Chili Enchilada Sauce (las palmas)
  • 2 cups shredded cheese
  • 1 cream cheese (optional)
  • corn tortillas
  • 1 can sliced olives
  • 1 can corn
Directions:

Layer the following in a 9x13 dish
 sauce
tortillas (covered in sauce)
chicken
cheese
olives
corn

Bake at 350 for 30-40 min

Garnish with sliced avocados and a dollop of sour cream (I bet this would be good baked with some cream cheese in it too!)

Shawna delivered this after I had Madison!  So delicious!
