- 4 cooked chicken breasts, shredded (or one pulled rotisserie chicken)
- One large can of Green Chili Enchilada Sauce (las palmas)
- 2 cups shredded cheese
- 1 cream cheese (optional)
- corn tortillas
- 1 can sliced olives
- 1 can corn
Layer the following in a 9x13 dish
sauce
tortillas (covered in sauce)
chicken
cheese
olives
corn
Bake at 350 for 30-40 min
Garnish with sliced avocados and a dollop of sour cream (I bet this would be good baked with some cream cheese in it too!)
