Preparation takes only about 5 minutes. Cooking time is one hour. I like to serve this with rice and steamed broccoli.
Preheat the oven to 375F/190C.
2 lbs/1 kg skinless chicken pieces
1 can (14 oz/398 mL) unsweetened pineapple chunks, drained
1 tsp dried rosemary
1/2 tsp paprika
1/2 salt
1/4 tsp pepper
1/4 tsp ground ginger
Prep Day: Place rinsed chicken in baking dish, cover with pineapple, freeze.
Combine rosemary, paprika, salt, pepper, and ginger in a ziplock bag for cooking day.
Cooking Day: Place chicken in baking dish, cover with pineapple, sprinkle seasoning on top, bake at 375 for one hour or until chicken is cooked through.
